These simple wild herb waffles with Gundermann are sure to delight your kids in May!


Have you ever made wild herb waffles? Now inside May it’s the perfect time to try something new, because the Gundermann is becoming fresh and strong again. This often overlooked wild herb brings not only a slightly spicy, aromatic taste, but also a dose of nature straight to your kitchen. In our simple recipe we will show you how to make wonderfully fragrant waffles with just a few ingredients: wild, delicious and surprisingly different.

Gundermann – a native wild herb found almost everywhere

When developing recipes it is important to us that you do not have to spend a lot of time searching for herbs. Gundermann grows very abundantly in our latitudes and is easy to identify. Cooking with Gundermann – delicious wild herb waffles

For 6-8 waffles you will need:

  • 200 g buckwheat (Earth)
  • 1 Banana (as Eiersatz)
  • 2-3 dates or figs (as a sugar substitute)
  • 200 ml of vegetable milk
  • 1 grated tonka bean
  • ½ teaspoon cream of tartar baking powder
  • 10 – 12 Gundermann stems with leaves and flowers
  • 5 sheets Lemon verbena or the zest of an organic lemon
  • 1 tablespoon vegetable fat for cooking

Wild herb waffle recipe with Gundermann

Gundermann and lemon verbena should be washed and dried. Then cut them into small pieces. All the other ingredients are then mixed into a wild herb waffle batter, the herbs are added and the tonka beans are grated. If the consistency of the dough is too thick or too liquid, simply add a little more non-dairy milk or flour. Then fry the waffles in a waffle iron until lightly browned and enjoy. Raw or heated wild herbs?

The waffles are quick to prepare and very tasty. The advantage of baking waffles is that they don’t have to stay in the oven for an hour, but are only exposed to heat for a short time. We’re basically not fans of long heating when it comes to wild herb recipes. But waffles are an “acceptable” compromise. The longest recipes with wild herbs Unfortunately, the fewer ingredients that need to be heated, the fewer ingredients remain in wild herbs. So it’s best to eat them raw, but with this compromise you still get some ingredients.
