This bread recipe is perfect for Easter


Wild garlic Now is the season – and what’s better than homemade wild garlic bread? We will show you two simple recipes: a classic one with spelled flour and a second based on oats or buckwheat. You can modify the basic recipe according to your tastes, for example with another flour or aromatic herbs from the garden. For your wild garlic bread you only need a bunch of fresh wild garlic, preferably picked yourself or fresh from the market.   • 250 g spelled flour 630 (or other flour)
  • 150 ml of warm vegetable milk
  • 1/2 teaspoon sugar or Sugar substitute
  • 1 teaspoon of salt
  • 20 g of yeast, even dry
  • 20 ml olive oil (or garlic oil)
  • 1 handful of wild garlic

All the dry ingredients are first mixed, a well is made and the liquids are mixed into it. Together with the washed and chopped wild garlic you can then work everything until you obtain a smooth and non-sticky dough. The dough is then left to rise, covered, for an hour. The bread is baked at 220 degrees for about 30 minutes. When the surface is slightly golden you can remove the bread from the oven. Recipe for gluten-free wild garlic bread

With this recipe you can bake gluten-free wild garlic bread. For the bread you will need:

  • 500 g of oat flour (gluten-free) or alternatively buckwheat flour
  • 20 g yeast (fresh or dry)
  • 1 tablespoon honey or Erythrol /xylitol
  • 2 teaspoons of apple cider vinegar
  • 450 ml of warm water
  • 1-2 teaspoons of salt
  • 1 handful Wild garlic

The flour and salt go into a bowl. The yeast is then crumbled and mixed with honey, vinegar, chopped wild garlic and water. Gluten-free dough is always a little more challenging. You may need to vary the amount of water depending on the flour you use. This is why you don’t have to add everything at once, but knead little at a time until you obtain a homogeneous and not too sticky dough. Now let the dough rise for two hours in a warm place, covered with a cloth. The bread can be baked in a pan or formed into a loaf on a baking sheet. It is cooked at 210°C for about 50 minutes on the central grill.

Furthermore, bread can also be easily frozen. If you double or quadruple the recipe, you can bake multiple loaves at once and freeze some or give them as gifts.
