  • 1 sachet of cream of tartar yeast
  • 150 g of apple sauce

Preparation of fruit bread

First you need to cut the dried fruit into cubes and the nuts coarsely chopped. If you have a Thermomix you can let it roughly chop everything for 5-10 seconds on level six. For the dough base, buckwheat flour, applesauce and yeast are mixed together to form a dough. If it is too thick you can add a little almond milk. But it should be relatively firm so you can shape it later. Then add the chopped nuts and fruit and the ground cinnamon. In the Thermomix you reach level three for 20 seconds. Otherwise you can use a planetary mixer with a dough hook. Now the dough should be shaped into a loaf and ideally placed in a greased baking pan. Bake in the oven at 160 degrees for 20-30 minutes, taking care that the bread does not become too dark.

Why is fruit bread healthy?

A slice of fruit bread is made up of lots of dried fruit (dates, figs, pears, apricots), hazelnuts, hemp seeds, walnuts and almonds. There is a small amount of flour, which is supposed to hold everything together. But no sugar, because dried fruit contains enough sweetness. The great thing is that you can add or remove things to suit your tastes. Spices like cinnamon and cloves make the bread really healthy. Clove and cinnamon essential oils can have a digestive effect and prevent flatulence. The high fiber content is excellent for our digestion and is particularly suitable for those who are lazy Colon. Fiber also ensures that our gut bacteria have something to do. This creates a feeling of satiety for longer and we have less desire to eat other sweet temptations. Eat a slice of fruit bread instead of a slice of cake and your health and scale will thank you! If you prepare the classic version according to grandma’s recipe, everything works as described above. The base of the dough, however, is made with spelled flour, eggs and tartar yeast. By the way: fruit breads should be stored in cling film or a bag so that they remain moist. The longer they are stored, the tastier they become as they age. If stored properly, they will last six to eight weeks. Other excellent recipes for the cold season are: homemade gingerbread without sugar, the Energy spheres and the homemade almonds.
