Ingredients for elderflower syrup

- 20-25 Holunderblütendolden
- 1 liter of water
- Juice of 2 lemons
- 1-2 teaspoons stevia or 1-2 tablespoons erythritol (to taste)
This is how elderflower syrup is made
- Collect umbels of fresh elderflowers. Make sure they are free of dirt and bugs. It’s best to shake them gently to ward off the insects. However, it is important that they are not washed as this could alter the taste.
- Remove the umbels from the stems by carefully cutting them. Avoid green or brown parts.
- Bring water to a boil in a large pot. As soon as it boils, you can remove the pan from the heat and Holunderblütendolden and add the lemon juice. Now everything is mixed well and the pot is covered with a lid.
- The mixture is left covered in a cool place for 24 hours to infuse. During this resting phase, the aroma of elderflowers is extracted.
- Once the rest period has passed, you can filter the syrup with a fine mesh strainer or with a cloth to eliminate any remaining flower residues. The cones can be easily squeezed to preserve all the flavor.
- Now the resulting elderflower juice returns to the pot and can be sweetened to taste with stevia or erythritol.
- Optionally you can add the juice of two lemons to increase the shelf life of the syrup.
- Sugar-free elderflower syrup can now be poured into clean glass bottles or containers and stored in the refrigerator. The syrup lasts about two weeks because stevia and erythritol do not keep like sugar. It doesn’t get as thick as a syrup with sugar because there is simply no sugar. It should also be consumed quickly. If you want to make a syrup that will last longer, it is advisable to use normal sugar. This results in a classic syrup which, thanks to the presence of sugar, can be preserved for several months even if not refrigerate

Conlusion
Homemade sugar-free elderflower syrup is a refreshing way to enjoy the delicate aroma of early summer without relying on refined sugar. Made from fragrant blossoms of Sambucus nigra, this lighter alternative preserves the floral character that makes elderflower syrup so beloved, while offering a more mindful approach to sweetness.
Although the texture and intensity may differ slightly from traditional sugar-based versions, the result is still wonderfully aromatic and versatile. Natural sweeteners or reduced-sugar methods allow the subtle citrus and honey-like notes of elderflower to shine through. When mixed with sparkling water, added to herbal teas, or drizzled into desserts, the syrup provides a gentle sweetness that feels fresh rather than heavy.
Preparing it at home also gives you full control over the ingredients. You can adjust sweetness levels, experiment with lemon zest or mint, and avoid artificial additives often found in commercial syrups. This makes it particularly appealing for those who are health-conscious, reducing sugar intake, or simply looking for more natural beverage options.
