Herbal salt recipe

To make herbal salt, you first need freshly picked wild herbs. It is best to gather those that are plentiful right now. They should be dealt with quickly, ideally on the same day. The basic recipe is: 150 g of fragrant herbs with 500 g of salt. The wild herbs should first be washed and dried with a cloth. After that, you can place them in a blender or meat grinder (We have used this for many years) and chop them finely until they create a smooth mix. Next, you add the salt, mix everything quickly again, and in the end, you should have a fine, even green mixture that doesn’t have larger bits of fiber. To dry the salt, place the still damp wild herb salt on a baking tray covered with baking paper, spread it out evenly, and let it dry for about a day. In the warm months, you can also do this outside, in the shade.

Dry the herbal salt properly

Otherwise you can dry the herbal salt in the oven or in a dehydrator at a temperature below 40 degrees to preserve the quality of the raw food. After about two days the salt should be dry. It is possible that larger lumps have formed; these can be crushed again or filled directly into the glasses. This results in a coarser or finer salt. The original shape of the salt also influences the final result. If you use coarse salt, the herbal salt will be a little coarser than the fine salt.
