Steam cooking

If you want to preserve as many nutrients as possible, steaming is ideal. Simply cook in the steamer for 10-15 minutes. This way they remain nice and firm to the bite.

Baking in the oven

To prepare crispy crisps or chips, cut them into sticks or slices, mix them with a drizzle of oil and spices and bake at 200°C for about 20-25 minutes. Don’t forget to turn them every now and then!

When it’s uncomfortable outside, I like to make a hearty parsnip soup. To do this I brown the onions and parsnips in butter, add the vegetable broth and blend everything finely. A squeeze of lemon and fresh chives give the finishing touch to everything. Sometimes I add a drop of cream to the soup: simply delicious!

Baked parsnips

For those who want to rediscover parsnips, baked parsnips are just the thing. Cut the parsnips into sticks, mix them with olive oil, salt, pepper and rosemary. Then put them in the oven at 200°C for about 25 minutes until they are golden. The taste of hazelnut is truly irresistible!

Innovative parsnip-based dishes: new taste experiences await you

Parsnips can do so much more: let’s experiment a little and discover new flavors!

Crispy parsnip chips

Parsnip chips are my new favorite snack. Cut the parsnips very thinly (preferably with a vegetable slicer), mix them with a drizzle of olive oil and your favorite spices. Then dry them in the oven at a low temperature until they are nice and crispy. You’ll be surprised at how delicious they are!

Abundant parsnip rosti

To make a delicious parsnip rosti, I coarsely grate the parsnips and potatoes, mix them with chopped onion, egg, salt and pepper. Fry the mixture in a hot pan until golden brown on both sides – perfect for breakfast or a light dinner.

Creamy parsnip gratin

My parsnip gratin is always a hit at family gatherings. I layer thin slices of parsnip with onions in a baking dish and pour over a mixture of cream, milk, garlic and grated cheese. After 40 minutes in the oven the surface will be golden and crunchy: a true culinary delight!

Parsnip curry

My parsnip curry offers a bit of variety. I fry onions, garlic and ginger, add the diced parsnips and curry paste. Pour in coconut milk, leave to simmer and finally garnish with fresh coriander. Basmati rice goes perfectly with this: a taste experience that will delight you!

Parsnip: delicious combined dishes

Do you know how versatile parsnips can be? I love combining them with other ingredients. Here are some of my absolute favorite dishes:

Creamy mashed parsnip and potatoes

This stomp is my tip for cold winter days! Simply cook the parsnips and potatoes until soft and buttery. Then mash them with warm milk, a generous knob of butter and a pinch of nutmeg. The sweet, nutty flavor of parsnips gives everything a special touch – you’ll love it!

Winter vegetable stew

When it’s raining and snowing outside, I like to cook a hearty stew. Cook parsnips, carrots, celery and potatoes with onions and garlic in vegetable broth – wonderful! A drop of cream at the end makes it pleasant and creamy. Add some crusty bread and the evening is saved.

Parsnip and carrot casserole

This casserole is my hit at parties! Arrange the thinly sliced parsnips and carrots in a mold and pour over a mixture of cream, grated cheese and aromatic herbs. After 45 minutes in the oven, the whole kitchen smells inviting – everyone’s mouth is watering!

Roasted parsnips

Have you ever tried parsnips in your Sunday roast? They absorb the flavors of the sauce and become tender and delicious. Just add it to the roaster, roughly chopped. They give the sauce a light sweetness and make it nice and creamy. They’re also great in goulash or braised beef rolls!

Parsnips in plant-based cooking

For all the veggie fans among you: parsnips are a hit in plant-based cooking! With their delicate, nutty flavor and creamy texture you can really conjure up something.

Vegan Parsnip Cream Soup

On cool days I like to cook a vegan soup with parsnip cream. Steam the parsnips with onions and garlic, add the vegetable stock and cook until soft. Then blend it with a pinch of non-dairy cream: silky smooth and delicious! A squeeze of lemon and fresh herbs make the taste experience perfect.

Parsnips as a meat substitute

Believe it or not, parsnips can even replace meat! Cut them into thick slices, season them well and fry them until crispy. They are an eye-catcher in burgers or wraps. My tip: Try a «parsnip steak»: marinate a thick slice and fry it. You’ll be surprised at how delicious it is!

Parsnip hummus

My latest highlight is parsnip hummus. Roast the parsnips in the oven until tender, then blend them with tahini, lemon juice, garlic and olive oil. The sauce goes very well with vegetable sticks or on bread. The slightly sweet taste of the parsnips harmonises wonderfully with the oriental aromas – a real taste experience!

Store parsnips correctly: this way they will stay fresh for a long time!

Do you know that parsnips can be real long-term guests in your kitchen? With a few simple precautions they will last weeks. Here are my best tips for you:

Here’s how you store fresh parsnips

Parsnips feel right at home in the vegetable compartment of your refrigerator. Wrap them in a damp cloth: this will keep them nice and crunchy. This way they will stay fresh easily for 2-3 weeks. My advice: wash them immediately before cooking, otherwise they will become soggy.

Do you have a cellar or a cool pantry? Perfect! At 0-4°C parsnips can last several weeks. Just make sure it’s nice, dark and airy.

Freezing parsnips: here’s how it works

If you have too many parsnips, freezing is the solution. Here’s how to do it:

  • Wash, peel and cut the parsnips into small pieces
  • Blanch briefly (2-3 minutes in boiling water)
  • Remove from the oven and drain well
  • Freeze in portions

They last in the freezer for up to 8 months – handy, right? You can add them directly frozen to soups or stews.

How long do parsnip dishes last?

Did you cook too much? No problem! Parsnip puree or soup will last about 3-4 days in the refrigerator. Simply store in a tight container and reheat before eating.

Crispy parsnip chips taste best fresh, but in a can they stay crunchy for 1-2 days. If they can last that long without being eaten!

Parsnips: the underrated all-rounder in your kitchen

Dear friends, let’s discuss parsnips! These roots are amazing changers. With their sweet and nutty smell, they fit into many meals. Whether in a smooth soup, crispy roasted vegetables or creamy mash, parsnips always add a fresh touch to the dish.

What about a parsnip gratin for Sunday dinner? Or consider a spicy parsnip curry on a dull autumn day. And for movie night: homemade parsnip chips: they are addictive, I assure you!

The best part? Parsnips are not just tasty, but also very nutritious. Full of vitamins, minerals, and fiber. And being a local winter crop, they are eco-friendly too.

So, go ahead and try parsnips! With my storage ideas, you can use them well. Get motivated by the recipes and find out what’s in these wonderful root vegetables. Enjoy trying new things in the kitchen!
