The cultivation of horseradish all year round
Horseradish is a hardy plant ideal for year-round cultivation. Here are the key steps to growing horseradish in your garden. Before you start growing, it is important to choose the right variety of horseradish. The most widespread variety is «Armoracia rusticana», which is well suited to cultivation in temperate climates. Horseradish thrives best in a sunny or partially shaded location in your garden.

The dirt needs to drain well and have a pH level of 6 to 7. Break up the dirt in the planting area and mix in a lot of organic material to enhance the dirt’s texture. Horseradish needs enough water, so it’s essential to water it often during dry spells. In spring or fall, place the horseradish roots about 10 cm deep in the ground. Make sure to set the roots around 12 inches apart to give them enough space to grow. Control weeds because horseradish does not handle competition well. Mulching regularly helps keep moisture and stop weeds from growing. You can pick the first horseradish roots in the fall when they are big enough. Gently pull up the roots and cut the parts you wish to use. You can leave the other roots in the ground to grow again next year.

Would you like to make a spicy and delicious horseradish sauce? It’s easy.
Ingredients:
- 3 tablespoons freshly grated horseradish
- 2 tablespoons sour cream or Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon sugar (or sugar alternative)
- Salt and pepper to taste
Horseradish sauce recipe
- Prepare the horseradish: Peel and finely grate the horseradish.
- Mix the sauce: In a bowl, combine the sour cream or Greek yogurt, olive oil, and optional Dijon mustard.
