Ingredients:

  • 2 cups coarse sea salt
  • 1 cup chive flowers (fresh or dried)

Directions:

  1. Remove the chive flowers from the stems and chop them lightly.
  2. In a mortar or food processor, combine the salt and flowers until the flowers are evenly distributed in the salt.
  3. Store the chive flower salt in an airtight jar.
  4. Use it as a flavorful topping for soups or salads. Salt gives dishes a slightly oniony note.

Recipe 2: Spring salad with chive flower sauce

  • 1 bunch radishes (sliced)
  • 1 cucumber (sliced)

For the seasoning:

  • 3 tablespoons of olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon mustard
  • 1 liter of honico
  • 1 tablespoon fresh chive flowers (chopped)
  • Salt and pepper to taste

Directions:

  1. Wash the wild herbs well and place them in a bowl together with the radishes, cucumber and carrot.
  2. For the dressing, mix all the ingredients in a small glass and shake vigorously until a smooth mixture is formed.
  3. Pour the dressing over the salad and mix well.
  4. Decorate with fresh chive flowers and serve
