5 ideas for working with children using wild herbsThe recipe for spiced biscuits
For the spice biscuits you will need:
- 100 g of hemp seeds (hemp flour)
- 150 g buckwheat (buckwheat flour)
- 150 g oat flour (gluten-free)
- 50 g linseed (ground linseed)
- 150 g erythrol (xylitol or date syrup)
- 1 heaped teaspoon of cream of tartar baking powder
- 1 tablespoon cocoa powder
- ½TL Ceylon Cinnamon
- 1 very ripe banana
- 1TL Gingerbread spice
- 1 grated tonka bean
- ¼ grated nutmeg
- ¼ teaspoon ground star anise
- ¼ TL Cardamom gemahlen
- approx. 150 ml plant-based milk, e.g. oat milk (gluten-free)
- 10 coarsely chopped walnuts for decoration

Preparation of spice biscuits
To prepare the dough you can use a Thermomix or a high-performance mixer. This happens in a very short time. The information in parentheses is alternative. We usually buy our baking ingredients unground and quickly grind them ourselves. To do this, add the hemp seeds, buckwheat and linseeds to the Thermomix or high-performance blender, grind everything for 10 seconds until you get a flour mixture at the highest level and add the remaining ingredients. You can add oatmeal, a ripe banana, non-dairy milk, erythrol, cocoa and spices all at once. Mix everything well again or mix until you get a stiff dough, which should not be too dry. If it is too crumbly you should add more vegetable milk. The dough must have such a consistency that it can be formed into small mounds with a spoon. Then you can arrange some mounds on a baking tray (lined with baking paper) with a teaspoon and decorate them with a little chopped walnut. The pan can be placed in the oven at 175 degrees for 10-12 minutes until the biscuits have risen a little and have taken on a light colour.
