Can you still eat wild garlic when it blooms?
Many people believe that wild garlic can no longer be eaten once it has flowered. It is not true. It is true that young leaves are the most tender and also taste better. But the fact that you can no longer eat grass after it has flowered is a myth. We either munch on the flowers raw, like peanuts, or pickle them to preserve them. Lightly spiced, it is a true delicacy. However, there is a problem: the harvest period is relatively short. The time has come for us now. If the buds are already open, which in some cases have already happened, they are no longer suitable for marinating. They really should still be fully closed.

Interesting facts about wild garlic in our paperback
In our little paperback”Wild garlic – wild pleasure“(available here), we have summarized everything you need to know about wild garlic. How you collect it, what plants you can confuse it with and how you can grow it yourself in the garden.
What do you need for wild garlic capers?
- Wild garlic sprouts (which should be as fresh as possible and not yet open)
- Vinegar (I used naturally cloudy organic apple cider vinegar, but clear vinegar seems nicer)
- Waterfall
- Agave syrup or honey to sweeten
- a little salt (only rock salt please)
- some peppercorns
- some mustard seeds
- to taste: 1-2 bay leave
Preparation of capers with wild garlic
First you need a preserving jar with a screw lid. Both should be boiled so that they are germ-free. For this I use the Thermomix. First I sterilize the jars and then prepare the broth in the jug. It is very important to work cleanly, otherwise mold can easily form and all the work will be in vain. The wild garlic shoots are first washed and placed in a colander to drain. The broth is then prepared in a pot. The base is made up of 50% water and 50% vinegar. Now it’s time to taste it. Add salt and spices to taste and check again and again whether the broth suits your taste. This requires sensitivity, so season carefully at first. Sweetness is important to obtain a harmonious taste. I tried the vegan version, but it works with honey too. I would recommend not using refined sugar, but it works just as well. Finally, add the wild garlic sprouts and bring everything to the boil briefly. Then you put everything in the preserving jars, which do not have to be filled completely, screw them on immediatel while they are still hot and turn the jars upside down. This is how the void is formed. Now it’s time to wait… After a week, the sprouts are tender and you could eat them. If stored, they can last up to a year if you work cleanly.
