Immortelle is an important medicinal plant, but is little known. It is already known as curry herb and is used in vegetable dishes or to flavor curry dishes. In this article we would like to show that the plant is particularly important in winter, when dark days put a strain on the mood.
Immortelle as a culinary herb

The Italian strawflower, which is also known as immortal, curry herb, or sun gold, is commonly identified by these names. Formally called Real Immortelle or Helichrysum italicum, this beautiful bush, featuring its bright yellow flowers, comes from the warm regions of Europe and Africa. Besides its beauty, it is valued as a cooking herb that adds both taste and health advantages to meals. More and more, this extraordinary plant is appearing in herb gardens across various areas.
In the kitchen, you can utilize immortelle flowers as a seasoning. They have a hot and fragrant flavor that is somewhat similar to curry. That’s why it is called curry grass. The flowers work great for adding taste to risottos, soups, and stews. They can also be used to taste oils and vinegars. Because the scent is very strong, even small amounts of the herbs or flowers are enough to enhance dishes.

It should never be applied pure to the skin, but always diluted in a carrier oil or cream. Plant water is also a good option if you are in a sad mood. How does immortelle thrive in the garden?
This culinary herb and medicinal plant can also be grown in your garden if you keep a few important things in mind. First of all, immortelle needs a sunny position. It prefers a place where it receives at least 6 hours of direct sunlight throughout the day. The ideal is a place in full sun. The soil should be permeable so that water can drain away easily. Slightly acidic soil with a pH between 5.5 and 6.5 is ideal. Regular fertilizing and watering are necessary, especially during the growing season and during the flowering period. It is important to note that immortelle is a perennial and does not flower much in the first few years. However, it can be stimulated by pruning and fertilizing to obtain abundant flowering. Immortelle is a robust plant and requires little care. However, it is important to protect them from frost and extreme cold. It is preferable to grow them in a container that can be stored in a sheltered area during the winter.
